offee doesn’t stop changing once it leaves the roaster. From the moment beans are bagged, they begin a slow transformation — influenced by humidity, oxygen, light, and time. Understanding these forces is the key to preserving flavor.

Moisture Content

Green coffee beans typically hold 10–12% moisture. Too much humidity during storage can cause mold or accelerate degradation. Too little, and beans dry out, losing aromatic compounds. Balance is everything.

Oxygen & Oxidation

Exposure to oxygen triggers staling. Aromatic compounds dissipate, lipids oxidize, and flavors flatten. Vacuum‑sealed or nitrogen‑flushed bags extend shelf life by slowing the inevitable chemistry of time.

Temperature & Light

Heat speeds chemical reactions, while light degrades chlorogenic acids and aromatics. Cool, dark storage preserves complexity. Think wine cellars, not kitchen counters.

Roasted Bean Shelf Life

Whole beans: 2–4 weeks at peak flavor
Ground coffee: 1–2 weeks
Vacuum‑sealed beans: several months, though aromatics fade

Best Practices

• Store in airtight containers (ceramic or vacuum canisters)
• Keep away from direct sunlight and fluctuating temperatures
• Avoid refrigerators (moisture condensation) and freezers (unless vacuum‑sealed)

Humidity and storage aren’t just logistics — they’re chemistry. Treat storage as part of the craft, and every cup will taste closer to the farm it came from.
