Particle Distribution
A consistent grind means even extraction. Uneven particles — fines and boulders — extract at different rates, creating imbalance. Fines over‑extract, adding bitterness. Boulders under‑extract, leaving sourness and thin body.
Surface Area & Extraction
Smaller particles expose more surface area, speeding up extraction. Larger particles slow it down. That’s why espresso demands fine grind, while French press thrives on coarse grind.
Flow Rate & Resistance
Grind size controls how water moves. Fine grinds resist flow, increasing contact time. Coarse grinds allow water to pass freely, reducing contact. This balance defines clarity, body, and sweetness.
Brew Method Guidelines
Espresso: fine grind, high pressure, short contact
Pour‑Over: medium grind, balanced flow, clarity
French Press: coarse grind, long steep, round body
Cold Brew: extra‑coarse grind, extended steep, smooth sweetness
