erroir is the complete natural environment where coffee grows — soil, altitude, slope, wind, rainfall, and shade. Together, these factors shape how sugars, acids, and aromatics develop in the bean.

Altitude and Temperature

High elevations slow cherry maturation, concentrating sugars and acids. The result: denser beans with vivid acidity and layered aromatics. Lower altitudes yield faster growth, heavier body, and chocolate or nutty tones.

Soil Composition

Volcanic soils enhance sweetness and clarity. Clay emphasizes chocolate depth. Sandy or loamy soils promote delicate florals and citrus. Soil is the matrix that determines how roots absorb nutrients and how flavor precursors form.

Microclimate and Rainfall

Seasonal rainfall and dry harvest periods influence cherry development. Shade-grown coffee slows maturation further, encouraging biodiversity and complexity. Even neighboring farms can yield radically different cups.
